Aunt Gussie’s Cookies and Crackers-Naturally Delicious!

It was merely 25 years ago when Aunt Gussie’s cookies and crackers was born by Marilyn Caine in her own kitchen. Now, this popular label can be found in markets across America. Made with a wide variety of flours including, whole grain, spelt, wheat, and wheat free/gluten free, these cookies are hardly bad for you, for they contain zero grams trans fat. What is so special about these cookies and crackers, you ask? Well many people are unaware of some of the particular flours used in Aunt Gussie’s cookies and the benefits they hold.

 

Spelt, which is organically grown and used in some varieties of the sugar-free cookies, biscotti, biscottini, and the naturally sugar-free cracker flats, was originally grown in Iran around 5000 B.C. and has been grown in Europe for over 300 years. Fairly new to North America, spelt has been growing here for about 100 years. The popularity of this grain started to grow due to the protein and nutrition content in comparison to wheat. Being a subspecies of wheat, the spelt has a hull, which protects the grain. However, because the hull is tighter than that of wheat, the nutrients can stay intact, whereas wheat has a looser hull thus losing the important nutrients, but makes for a much easier harvest, hence the popularity.

The number of people who cannot tolerate gluten is on the rise. Also known as celiac disease, this reaction is caused by a protein found in wheat, barely, and rye and all three grains must be eliminated from ones diet. A variety of flours are used for each cookie and they include brown/white rice, amaranth, sorghum, tapioca, quinoa, and garbanzo.

 

Besides the specialty products, Aunt Gussie’s produces a line of classic cookies and crackers made with wheat flour. A few varieties include biscotti, cookies, cracker flats, and meltaways.
